Quick Lavash Breakfast in a Pan

Simple, tasty, and filling, made from everyday ingredients! Quick Lavash Breakfast in a Pan resembles a hot sandwich, but larger - enough for the whole family. Lavash soaks in eggs, becoming soft inside with a delicious golden crust outside.

Step 1
I used ready-made thin round flatbreads, but you can take regular thin lavash and cut out three circles the size of your pan. My ham was pre-sliced, but a chunk works too - just slice or dice it as you prefer.

Wash and dry the tomato, then slice it into rounds.

Dice the bell pepper.
Step 4
Grate the cheese on a large grater. Any cheese works - hard, semi-hard, soft, even mozzarella. The main thing is that it’s tasty, high quality, and melts well.
Step 5
Crack the eggs into a bowl. Add milk, salt, and pepper to taste. Beat with a fork until smooth.
Step 6
Heat a 9.5-inch (24 cm) skillet over medium heat. Add a little vegetable oil for frying, and optionally a cube of butter. The butter gives flavor, while the vegetable oil prevents burning. Pour in half the egg mixture.
Step 7
Place one lavash round on top. Add ham, tomato slices, and diced pepper. You can also add herbs or garlic. Sprinkle with half the grated cheese. Cover with the second lavash round.
Step 8
Add another layer of ham, tomato, and pepper, sprinkle with the remaining cheese, then cover with the third lavash. Press down with your hand. Pour the rest of the egg mixture over it.
Step 9
Cook the “pie” under a lid on low heat for 5-7 minutes until the bottom is golden. Flip to the other side. The easiest way is to slide it onto a plate first, then flip it back into the skillet.
Step 10
Cover again and cook another 2-3 minutes. Transfer to a plate or cutting board, slice into portions, and serve. Enjoy!
