Quick Fluffy Sponge Cake for Cake

First, prepare all the ingredients for excellent homemade baking according to a tried-and-true recipe.

Start making the batter by cracking six medium eggs into a large bowl, add a pinch of salt, and beat with a mixer until smooth.

Gradually add 150 g (¾ cup) of sugar into the egg mixture in three portions.

Continue beating the eggs and sugar until you get a thick, fluffy, white mass.

In a small bowl, combine 120 g (1 cup) of all-purpose flour, 1 tsp baking powder, 1 tsp cornstarch, and 25 g (3 tbsp) cocoa powder, mixing the dry ingredients well.

Sift the dry ingredients into the egg mixture in several portions.

Gently fold in the dry ingredients with a whisk from bottom to top, keeping the batter airy, until smooth and thick.

Grease a cake pan with a little butter, line the bottom with parchment, and pour in the batter.

Evenly spread the batter in the pan, let it rest 2 minutes, then bake in a preheated 170°C (340°F) oven on the lower rack for 50-60 minutes. Turn off the oven and let the cake rest inside for another 10 minutes.
