Quick flatbreads

Preparation
Step 1
Place the flour and salt into a large mixing bowl. Gradually drizzle in the water, adding it little by little while mixing to bring the ingredients together. Stir until a dough begins to form. If helping children mix, they can use one finger to combine the ingredients without getting their whole hands covered. To clean sticky dough from hands, rub on a little extra flour over a bowl or bin rather than washing, as dough can block drains.
Step 2
Add the oil to the dough and begin kneading. Continue kneading until the dough becomes soft and smooth. If the dough feels too sticky, sprinkle in a little more flour. If it feels too dry, add a small splash of water. Knead the dough for 5 minutes, either in the bowl or on a clean work surface, until elastic and pliable.
Step 3
You can cook the flatbreads immediately or allow the dough to rest for about 30 minutes, which helps relax the gluten and makes rolling easier. When ready, divide the dough into four equal portions, or six portions if using a smaller frying pan. Shape each portion into a ball.
Step 4
On a lightly floured surface, roll out each dough ball one at a time using a rolling pin until flat. Lift and move the dough occasionally while rolling to prevent sticking, adding only a small amount of flour if necessary. The flatbreads do not need to be perfectly round.
Step 5
Heat a large frying pan over a medium heat. Lightly oil the surface using a piece of kitchen paper. Place one flatbread into the pan and cook for about 2 minutes on the first side, until it begins to puff slightly. Turn it over using tongs and cook for another 2 minutes on the other side, until lightly coloured with golden spots.
Step 6
Transfer the cooked flatbread to a plate and keep warm by wrapping in foil or a clean tea towel. Repeat with the remaining dough and serve warm.
