Use a soft cheese (like suluguni or Adyghe). If unavailable, substitute with feta, brynza, or semi-hard cheese - the key is good flavor and easy melting.

Mix flour with baking powder and sift it through a sieve. This enriches it with oxygen, making the khachapuri softer and fluffier.

Grate the cheese on a fine or coarse grater. You can use one kind or a mix of several.

In a bowl, whisk the egg. If your cheese is salty enough, skip the salt; if it’s mild, add a pinch.

Pour in the milk and stir. Ideally, the milk should not be too cold.
