This quick apple cake is a variation of classic charlotte. Small pieces of butter are layered with the apples instead of being mixed into the batter, making the finished cake especially juicy.

Preparation
Step 1
Prepare the ingredients. The original recipe uses a 200 ml measuring glass. The amount of flour is approximate, so you may need slightly more or less depending on the consistency of the batter.
Step 2
Crack the eggs into a bowl and begin beating with an electric mixer, gradually adding the sugar. You can reduce the amount of sugar to taste. Beat until the mixture becomes pale and fluffy.
Step 3
Mix the baking powder and a pinch of salt into the flour. Sift most of the flour into the egg mixture and gently fold it in with a spatula using upward movements.
Step 4
The batter should be smooth and about as thick as sour cream. If it seems too runny, add the remaining flour or a little more as needed.
Step 5
Wash the apples, cut them into quarters and remove the cores and seeds. Cut the apples into slices.
Step 6
Prepare a suitable baking pan. If it is not silicone, lightly grease it with butter and dust with flour. Arrange the apple slices over the bottom. If using a ring-shaped pan, you can use half of the apples at this stage; in a regular pan, arrange all the apples over the bottom.
Step 7
Pour the batter over the apples; if using a ring-shaped pan, pour in half of the batter, arrange another layer of apples and evenly distribute small pieces of butter over them. If using a regular shallow pan, distribute the butter directly over the apple layer.
Step 8
Pour the remaining batter into the pan.
Step 9
Bake in an oven preheated to 350°F for 30–40 minutes. The exact time will depend on the size of the cake and your oven. Check with a wooden skewer inserted into the center; it should come out dry. Let the cake cool slightly, then remove it from the pan.
Step 10
Slice the apple cake and serve.
