Quick and Easy Pumpkin Fritters
Golden, appetizing, juicy, bright orange! Making pumpkin fritters is quick and easy. It takes very little time - the most work is peeling the vegetable. Kids will love them because they turn out sweet even without added sugar.

Step 1
How to make pumpkin fritters quickly and easily? Prepare the ingredients. The pumpkin weight is listed before peeling. You may need a bit more or less flour depending on how juicy the pumpkin is. You can fry these fritters in a dry pan - then you won’t need oil.

Wash the pumpkin and remove the peel and seeds. Be careful - pumpkin is very hard, don’t cut yourself! It’s easier to cut it into smaller pieces and peel them separately.

Grate the pumpkin. What grater size should you use? Up to you. The largest holes are fastest and easiest, but then the fritters need longer cooking or the pumpkin may stay firm inside. The finest holes make almost a purée - fritters will be the most tender, but it takes more effort. I always use the medium holes: quick and tasty.
Step 4
Add the egg and salt to the pumpkin. Sift in the flour. Since we don’t add baking soda or baking powder, sifting is what gives the fritters a little fluffiness.
Step 5
Mix everything well into a smooth batter. My pumpkin was medium-juicy, so the batter turned out fairly thick. The fritters held their shape well and were easy to flip. If your batter is runny, add a bit more flour - but don’t overdo it so you don’t overpower the pumpkin flavor.
Step 6
Heat a skillet over medium heat. Pour in oil and heat it well so the fritters don’t stick. If you’re frying without oil, it’s better to use a nonstick pan. Spoon the batter onto the pan, shaping round fritters.
Step 7
Fry on both sides over low heat until golden, a couple of minutes per side. If you used a coarse grater, cover the pan for a bit so the pumpkin has time to cook through. Remove the fritters from the pan and serve right away. Sour cream goes very well with them. You may not need any other toppings - the pumpkin flavor is bright on its own.
