Quick and Easy Pie Baked in the Oven

Preparation
Step 1
Use all-purpose flour of the highest quality. Eggs should be large and selected. If eggs are small, take 4. All ingredients should be at room temperature, so take them out of the fridge in advance. Kefir of any fat content will work.
Step 2
In a deep bowl, combine eggs, sugar, and salt, and beat with a mixer until fluffy and light. The mixture should increase 3-4 times in volume. The fluffiness of your pie depends on how well you whip the eggs. Do not beat until stiff peaks form - overbeating will cause the egg whites to lose air bubbles that help the dough rise. In that case, even baking powder won't help, and the pie will not rise properly or will rise poorly.
Step 3
Pour in kefir, vegetable oil, and lemon juice. Add lemon and orange zest (optional). Mix the batter with the mixer on low speed. You can substitute kefir with milk or natural yogurt.
Step 4
Sift the flour together with baking powder and whisk the batter until smooth using a whisk.
Step 5
The batter should be fluffy and airy. Many air bubbles will appear on the surface from the acid reacting with baking soda.
Step 6
Line a baking dish (mine is a 20×20 cm square pan) with parchment paper and grease it with vegetable oil. Pour the batter in and smooth the surface. Bake the pie in a preheated oven at 356°F (180°C) for 30-35 minutes until a toothpick comes out clean. Avoid opening the oven door while baking to prevent the pie from falling.
Step 7
Cool the finished pie, sprinkle with powdered sugar, decorate with mint and lemon slices, and serve. Enjoy your meal!
