You can use either fresh or frozen pumpkin. Sift the flour in advance to aerate it.

If using fresh pumpkin, grate it and squeeze out excess juice. If using frozen pumpkin, thaw it, drain the liquid, and blend or mash it. Chop the walnuts finely or crush them with a knife.

To make the batter, combine the eggs and sugar. Beat them with a mixer until a fluffy foam forms.

Mix in the vegetable oil with the eggs.

Gradually stir in the sifted flour mixed with baking soda.

Add cinnamon, pumpkin, and walnuts to the batter. Stir until well combined.

You can bake the muffins in paper liners of any size. Fill them with batter, leaving some space from the top.

Bake the muffins in a preheated oven at 350°F (180°C) for about 20 minutes. The exact time may vary based on your oven. The muffins should rise and turn golden brown.

Remove them from the oven and let them cool down.
