Pumpkin Jam with Lemon
This colorful pumpkin jam is flavored with lemon and mandarins and cooked in three short stages, helping the pumpkin pieces retain their shape. Oranges can be used instead of mandarins, and a little cinnamon can be added for a warmer flavor.

Preparation
Step 1
Prepare the ingredients. You can replace the mandarins with oranges, which will also give the jam a pleasant sweet citrus aroma. If desired, add a little cinnamon for a warmer flavor and slightly darker color.

Wash the pumpkin, peel it and remove the seeds and fibrous center. Cut the flesh into small pieces.
Step 3
Place the chopped pumpkin in a saucepan and cover with the sugar.

Mix well and leave for about 20 minutes, until the pumpkin begins to release its juices and the sugar starts to dissolve.
Step 5
Wash the lemons thoroughly and cut them into thin pieces, removing the seeds. You can remove the peel if preferred, although leaving it on will give the jam a stronger citrus flavor.

Wash the mandarins and cut them into pieces.
Step 7
Add the chopped citrus fruit to the pumpkin and mix well.

Place the saucepan over the heat and bring the jam to a boil. Cook for 5 minutes, skimming off any foam that forms, then remove from the heat. Avoid stirring unnecessarily so the pumpkin pieces retain their shape.

Leave the jam to cool completely, for about 5 hours. Bring it back to a boil and cook for another 5 minutes. Repeat this process until the jam has been boiled three times in total.
Step 10
After the third boil, ladle the hot jam into clean, heat-safe jars or containers. Do not treat this recipe as a shelf-stable canned preserve.
Step 11
Allow the jam to cool, cover and refrigerate. For longer storage, transfer it to suitable freezer-safe containers and freeze instead of storing it at room temperature.

Serve the pumpkin and lemon jam with tea, use it as a filling for pies or add it to desserts.
