Preparation
Step 1
How do you bake puff pastry turnovers with thick jam? Prepare all the necessary ingredients. Thaw the puff pastry and roll it out with a rolling pin to about 3 mm / about 1/8 inch thick. Cut each sheet into 6 equal squares. In total, from 500 g / about 1.1 lb of pastry, I got 12 small turnovers. You can use yeast puff pastry or yeast-free puff pastry. I used yeast puff pastry.
Step 2
On each piece, use a small sharp knife to make 3–4 parallel cuts all the way through on one side.
Step 3
Place 1 teaspoon of thick jam on the other half of each piece. I like cherry jam, so I chose that one. But of course, the jam can be absolutely any kind: apple, strawberry, or apricot, for example.
Step 4
Lightly moisten the edges of each piece with plain water on the inside, on the side where the jam is. The water will act as a kind of “glue” to help seal the edges more firmly later. Fold the turnovers in half on the work surface.
Step 5
Use a fork to press the edges of each turnover on three sides. Work with the flat side of the fork tines, pressing the edges together fairly firmly. Be careful not to press through both layers completely, otherwise the turnovers will end up with a pretty fringe.
Step 6
Place the egg yolk in a bowl and pour in the milk. Mix thoroughly with a fork or whisk.
Step 7
Place the pieces on a baking sheet lined with parchment paper. Brush the turnovers with the egg mixture using a silicone pastry brush. Preheat the oven to 200°C / 392°F. While the oven heats, the turnovers will have time to proof. Bake the turnovers for about 30 minutes, until golden brown. The time is approximate, so adjust it according to your oven.
