Puff Pastry Pockets with Cheese

Preparation
Step 1
Prepare the ingredients. For this recipe, use ready-made puff pastry, but you can make it yourself if desired. If using frozen pastry, thaw it by transferring it from the freezer to the bottom shelf of the fridge to maintain all its properties.
Step 2
Preheat the oven because the pastries are shaped very quickly. Set the temperature to 180°C (350°F), and in an electric oven, use the top-and-bottom heating mode. Now, prepare the filling. Grate the cheese. Any cheese will work—hard, soft, as long as it’s good quality and natural. I used Maasdam and Sulguni cheese, but they are also great with brined cheese like feta. Soft cheeses can be mashed with a fork.
Step 3
Crack an egg into the cheese and mix well. If the cheese doesn’t have a strong flavor, you can add salt and pepper.
Step 4
Usually, ready-made puff pastry comes in two sheets. Start with one, then proceed to the second. Place the dough on a surface. If it starts sticking, dust the surface with flour. Roll out the dough to a thickness of about 0.5 cm (0.2 inches). Don’t roll it out too thin, as it may damage the structure of the layers.
Step 5
Cut the dough into squares. I got 4 squares from one sheet. Place one tablespoon of cheese filling in the center of each square.
Step 6
Form the pastries by folding the squares diagonally. Press the edges tightly, sealing them with a fork. You can shape them however you like; I folded two into an envelope shape. But I liked the triangle shape more. Repeat with the second sheet of dough. Line a baking sheet with parchment paper and place the prepared pastries on it.
Step 7
Beat the yolk of one egg with a fork. You can add a teaspoon of water to it. Brush the pastries with the egg yolk using a pastry brush. Sprinkle sesame seeds on top.
Step 8
Bake the pastries in the preheated oven until golden brown. This will take 20-30 minutes, and the exact time will depend on your oven and the size of the pastries. My pastries baked for 30 minutes.

Remove the pastries from the oven, let them cool slightly, and serve. Enjoy!
