Step 1
Take the puff pastry out of the freezer in advance and thaw according to package instructions. Use mixed minced meat (pork, beef, chicken). Use Dijon mustard, not spicy.

Peel and rinse the onion. Chop as finely as possible. If you dislike onion, skip this step.

Grate cheese on a coarse grater. Use any hard cheese, ensuring it melts well. Mozzarella can be substituted.

Add the chopped onion, grated cheese, and mustard to the minced meat. Mustard can be replaced with 1 tbsp mayonnaise. Add 1 tbsp of olive or refined sunflower oil.

Salt and pepper to taste, then mix well until uniform. Optionally, add spices, checking for salt content to avoid over-salting.

Roll out one sheet of thawed puff pastry to ~5 mm thickness. Use a cup or cutter ~2.5 inches (6 cm) to cut circles.

Place ~1 tsp of filling in the center of each circle.

Brush edges with egg white to prevent tearing, then fold into small pies. Ensure edges are tightly sealed and create a decorative seam.

Line a baking tray with parchment paper or silicone mat. Place pies spaced apart. Brush tops with egg yolk. Bake in a preheated oven at 356°F (180°C) for 25-30 minutes until golden. Baking time may vary.

Serve puff pastry pies hot for best taste, though they are also good cold. Accompany with garlic or other sauces, fresh vegetables, or pickles. Enjoy!
