Step 1
How to make a puff pastry pie with soft brined cheese and herbs? Measure out the ingredients. Puff pastry can be either yeasted or yeast-free. For the filling, brined cheese, feta, or a semi-hard cheese will also work. Preferably not too salty.

Grate the cheese on a coarse grater and place it in a suitably sized bowl.
Step 3
Rinse the herbs and pat dry well. Remove thick stems. Finely chop the herbs. Alternatively, use green onions, cilantro, or aromatic herbs.

In a small bowl, beat the egg with a fork until smooth.

Combine the grated cheese with the herbs, add about 2/3 of the beaten egg. Reserve a little egg to brush the top of the pie.

Mix everything well so the filling ingredients are evenly distributed.

Roll out half of the puff pastry into a sheet about 0.2 in (0.5 cm) thick.

Wrap the dough around a rolling pin and transfer it to a baking sheet lined with parchment. If needed, grease the parchment with vegetable oil. Shape a small ball from part of the filling and place it in the center of the rolled-out dough. A short distance from the center, arrange the remaining filling in a ring about 1.6-2 in (4-5 cm) wide. For a neater shape, you can mark outlines beforehand using plates of suitable diameter.

Roll out the second half of the dough in the same way. Lay the sheet carefully over the filling and lightly press the dough along the contours of the filling.

Trim the dough around the pie’s edge to make it neat.

Press the edges so the filling doesn’t leak during baking.

Without touching the center part, cut the pie all around into equal segments.

Slightly bend each segment outward, turning it onto its side. Do this in one direction. The cut pieces should lie like a fan so the filling is visible.

Brush the top with the remaining beaten egg. If desired, sprinkle the center with flax, sesame, sunflower seeds, or poppy seeds.

Bake in a preheated 356-374°F (180-190°C) oven until browned, about 25 minutes. Baking mode may vary depending on your oven. The finished pie is about 10 in (25 cm) in diameter.

Serve the cheese-and-herb pie warm or cooled. The edges can be easily separated into portions without slicing. Enjoy your meal!
