Puff Pastry Cheese Envelopes
A quick and easy homemade pastry for tea. I almost always keep a small amount of puff pastry in the freezer. When I need fast and tasty baking, I can make something delicious. The fillings for this type of pastry can be very diverse, but one of the tastiest is cheese filling.

Preparation
Step 1
To make the puff pastry envelopes, prepare everything you need. You can make the puff pastry yourself, but it is faster to buy ready-made pastry. It is just as good and saves a lot of time. Take the pastry out of the freezer in advance and let it thaw at room temperature. I will use a fresh white cheese. Feta, sulguni, or Parmesan also work very well. Choose the cheese according to your taste.
Step 2
To make the cheese filling, grate the cheese on a coarse grater and add the egg yolk to it. Keep the egg white in a separate bowl. It will be needed to brush the tops of the envelopes before baking. Mix the yolk with the grated cheese.
Step 3
Roll out the softened puff pastry on a table lightly dusted with flour. Cut the pastry into 9 squares of roughly the same size.
Step 4
Place a little cheese filling in the center of each square. Bring the corners of the pastry together in the middle and pinch the edges to form an envelope.
Step 5
Line a baking tray with parchment paper and place all the prepared envelopes on it. Brush the tops of the envelopes with the reserved egg white. It is convenient to use a pastry brush for this.
Step 6
Sprinkle all the envelopes with sesame seeds. Place the tray with the envelopes into an oven preheated to 190°C (375°F) for 30 minutes. Use your oven as the guide for baking time. The finished envelopes will become an appetizing golden color and will rise a little in volume.
Step 7
Take the envelopes out of the oven, let them cool slightly, and serve. They go perfectly with hot sweet tea. When served warm, they disappear from the table instantly. Enjoy!
