About 45 min.
Preparation
Step 1
Take the puff pastry out of the freezer in advance. Remove it from the packaging and leave it on the counter for about 30 minutes. It doesn't need to be fully thawed—just soft enough to work with.
Step 2
I have two sheets of puff pastry, each 250 grams (about 8.8 oz). Cut each sheet into 9 squares.
Step 3
In the center of each square, make a cut to form a smaller square inside, but do not cut all the way through.
Step 4
Line a baking sheet with parchment paper. Arrange the prepared pastry squares on the sheet, leaving space between them as they will puff up during baking. Brush the outer square with egg yolk and sprinkle with sugar. Bake in a preheated oven at 350°F (180°C) for 15–20 minutes.
Step 5
Once baked, the pastry will have puffed up and turned golden brown. Remove from the oven. Carefully remove the top layer of the inner square. Let everything cool completely.
Step 6
To make the cream, combine heavy cream and cream cheese. Add powdered sugar and whip until the cream is thick and fluffy.
Step 7
Using a piping bag with a nozzle, fill the cooled pastry shells with the cream.
Step 8
Decorate the tops with any fruits or berries you like. Serve your puff pastry cakes with berries and tea. Enjoy your treat!
