Preparation
Step 1
Prepare the ingredients for the filling. Use any apples you like. Add more sugar if they are tart and less if they are naturally sweet. Brown or white sugar, honey or molasses can be used. Rinse and dry the apples. Thaw the puff pastry in advance.
Step 2
Sort through the raisins and remove any debris. Place them in a bowl, cover with boiling water and leave to soak for 7 minutes. Drain and pat the raisins dry.
Step 3
Peel the apples, cut them into quarters and remove the cores and stems.
Step 4
Cut each apple quarter into thin slices.
Step 5
Combine the apple slices, dried raisins, starch and ground cinnamon in a bowl. Pour in the lemon juice.
Step 6
Add the brown or white sugar and mix everything thoroughly.
Step 7
For 1 strudel, use approximately 8.8 oz of non-yeasted puff pastry. A rectangular sheet is particularly convenient, as it is easy to roll to the required shape.
Step 8
Roll out the puff pastry on a work surface generously dusted with flour.
Step 9
Spread the apple filling along one side of the pastry, leaving the edges clear.
Step 10
Fold the side edges inward so the filling and apple juices do not escape during baking.
Step 11
Carefully roll the pastry around the filling, taking care not to tear it.
Step 12
Place the strudel seam-side down on a baking sheet lined with parchment paper. Make several shallow crosswise cuts on top with a knife.
Step 13
Bake in an oven preheated to 350°F for about 40 minutes, until the pastry is puffed and golden brown. Adjust the time according to your oven.
Step 14
Leave the baked strudel to cool, then dust it with confectioners’ sugar. Cut into slices and serve.
