Puff Pastry Appetizer with Red Fish

Preparation
Step 1
Thaw the puff pastry in advance. To do it gently, transfer it to the lower shelf of the fridge. Any red fish will work; I used trout.
Step 2
Place the pastry on a floured surface and roll it out into a square about 1/8 inch (3 mm) thick. Cut into squares about 2.5-3 inches (6-8 cm) wide. Depending on size, you’ll get larger or smaller “boats.”
Step 3
Fold each square in half and press the short edges together firmly with a fork. Unfold it slightly to create a boat shape. Pinch the sealed edges by hand to prevent them from opening during baking.
Step 4
Place the prepared boats on a baking sheet lined with parchment paper. Beat an egg with a fork and brush it over the pastry using a kitchen brush.
Step 5
Bake the pastry in a preheated oven at 350°F (180°C) for about 20 minutes, until golden brown. Exact time may vary depending on your oven.
Step 6
Transfer the baked boats to a cooling rack.
Step 7
Place the cream cheese into a piping bag or a regular plastic bag with the corner cut off. Gently press the center of each boat down with a spoon and fill it with cheese.
Step 8
Cut lemon slices into triangles. Slice the fish into thin, long strips.
Step 9
Roll the fish strips into spirals and place them into the boats, pressing them lightly into the cheese. Add a lemon piece and a sprig of fresh herbs beside the fish.
Step 10
Serve the appetizer. Enjoy!
