Puff Pastries with Strawberries

Preparation
Step 1
Use store-bought puff pastry, either rolled or in sheets. I use square sheets - no need to roll them too much. You can also use yeast or puff-yeast dough.
Step 2
Wash strawberries and remove stems. Cut each berry into 4 pieces. Leave small berries whole.
Step 3
Thaw the pastry in advance. Roll each sheet slightly into a square and cut into 4 smaller squares.
Step 4
Fold each square into a triangle. Using a sharp knife, make cuts near the top corner about 5 mm from the edge.
Step 5
Unfold the squares and brush the center edges with egg yolk.
Step 6
Fold the cut edges in opposite directions to form nicely shaped pastries. Two sheets yield 8 pastries.
Step 7
Place the pastries on a parchment-lined baking sheet. Sprinkle a little cornstarch in the center to prevent the strawberry juice from soaking the pastry.
Step 8
Sprinkle sugar on top of the cornstarch and spread evenly.
Step 9
Arrange the sliced strawberries on top. You can add or replace with other berries or fruits.
Step 10
Brush pastries with egg yolk. Bake in a preheated oven at 190°C (375°F) for 25-30 minutes, depending on your oven.

Transfer the baked pastries to a plate, garnish with fresh strawberries and mint, and serve. Enjoy!
