Preparation
Step 1
Prepare all the ingredients for a processed cheese roll with an egg and crab stick filling. If the crab sticks are frozen, place them on the bottom shelf of the refrigerator in advance until fully thawed. Boil the eggs for 12 minutes after the water comes to a boil over medium heat. Pour cold water over them and cool completely.
Step 2
Peel the hard-boiled eggs and separate whites and yolks. Fresh eggs can be hard to peel, so crack the shell and soak the eggs in water for a bit - water gets under the membrane and the eggs peel more easily.
Step 3
The film on crab sticks can sometimes be hard to remove. To make it easier, hold the sticks over steam for 1-3 seconds. Finely grate the crab sticks into a bowl, add 1 Tbsp sour cream and the crumbled yolks. Salt to taste (keep in mind the saltiness of the crab sticks and cheese) and mix well with a spoon. You can replace sour cream with mayonnaise or Greek yogurt.
Step 4
In another bowl, finely grate the egg whites and the peeled garlic (pat the garlic dry with a paper towel first). Add the remaining sour cream, salt to taste, and mix. Adjust the amount of garlic as you like.
Step 5
Unwrap the processed cheese portions and lay them in a single layer inside a sturdy plastic bag. Place the bag on the microwave turntable. Heat on full power for about 30 seconds and check. If the cheese has softened, take it out and roll it out right in the bag into a rectangle. If it’s still firm, heat in 20-second bursts, checking each time.
Step 6
Cut the plastic open on top and unfold it, exposing the top of the cheese layer. Spread the egg-white filling in an even layer.
Step 7
Spread the crab filling evenly over the egg-white layer.
Step 8
Rinse the herbs, pat dry, and finely chop. Sprinkle over the crab layer. Use any herbs you like.
Step 9
Using the plastic underneath, roll everything into a log. Wrap in the same plastic and place in the freezer for 2 hours so it firms up, but do not let it freeze solid - after thawing it may crumble. If you’re not sure you’ll remember, refrigerate for a few hours or overnight instead.
Step 10
Slice the processed cheese roll and serve. You can arrange the slices on a platter and surround them with olives, pickled vegetables, and sauces. Store the finished roll wrapped in plastic wrap or foil in the refrigerator for no more than 24 hours. Freezing is not recommended, as the texture can change significantly. Enjoy!
