Prince Salad with Beef and Walnuts

Preparation
Step 1
Prepare the ingredients. Choose a less fibrous, not-too-fatty cut of beef so it won’t be tough in the salad. I used veal. Tenderloin or fillet works well. You can also use salted cucumbers instead of pickles. Mayonnaise can be store-bought or homemade.
Step 2
Lower the meat into boiling salted water. Simmer on low heat, covered, for about 40-60 minutes, until tender. To check doneness, pierce with a knife: the juice should run clear. For extra aroma, add a bay leaf and whole peppercorns to the broth.
Step 3
Lightly toast the walnuts in a dry skillet over medium heat for 3-5 minutes, until fragrant. Let cool, then chop into small pieces so they’re noticeable in the salad.
Step 4
Peel 1-2 garlic cloves. For the strongest flavor, press or finely grate them. If you prefer a milder garlic note, finely mince with a knife.
Step 5
Dice the completely cooled meat into small cubes. You can slice it into thin strips, but then cut the other ingredients the same way. If the meat is fibrous, slice across the grain so it stays tender.
Step 6
Dice the pickles into the same small cubes as the beef. If they’re very watery, gently squeeze them by hand so the salad doesn’t turn runny.
Step 7
Hard-boil the eggs at a gentle boil for 7-8 minutes. Cool in cold water, peel, and dice into small cubes.
Step 8
Place a serving ring on a plate (mine was 16 cm / about 6.3 in in diameter). Evenly layer half the beef and drizzle/spread mayonnaise over it. Add half the pickles, then half the garlic. Add mayonnaise again. Layer half the eggs and add another thin mayonnaise layer. Repeat the same layers with the remaining ingredients in the same order (meat-pickles-garlic-eggs). Sprinkle the top with chopped walnuts.
Step 9
Refrigerate for about 30 minutes. Before serving, remove the ring and decorate as you like. Enjoy!
