Potatoes with Mushrooms and Tomatoes in the Oven

Preparation
Step 1
You can use regular tomatoes or cherry tomatoes.
Step 2
Peel the potatoes, garlic, and onion. Rinse everything in clean water and pat dry with a kitchen towel to remove excess moisture.
Step 3
Cut the potatoes into medium pieces. Cut mushrooms into 2 or 4 parts depending on their size. Grate the cheese on a coarse grater.
Step 4
Place potatoes and mushrooms into a large bowl. Slice tomatoes in half, then cut each half into thin slices. Chop onion into small pieces. Mince or press garlic.
Step 5
Add onion and garlic to the potatoes with mushrooms. Salt to taste, add your favorite spices, and pour in cream. Mix everything very well.

Transfer the mixture into a baking dish.
Step 7
Arrange tomatoes evenly on top, as shown in the photo. Place the dish in a preheated oven and bake until the potatoes are tender. The baking time and temperature depend on your oven. I baked for about 40 minutes at 430°F (220°C).
Step 8
Remove from the oven, sprinkle grated cheese on top, and bake again until the cheese is golden, about 10-15 minutes.

Garnish the finished dish with fresh herbs and serve immediately.
