Potatoes with Bacon in Foil

Preparation
Step 1
Choose medium-sized potatoes of similar size, they look better this way. I used 6 pieces. You may add your favorite spices to taste.
Step 2
Cut bacon strips into smaller slices. You can use raw, dry-cured, or smoked bacon. I used dry-cured bacon.
Step 3
Peel the potatoes and pat dry with paper towels. Place each potato in a tablespoon or between two chopsticks and make frequent deep cuts with a knife, without cutting all the way through.
Step 4
Sprinkle the potatoes with dried garlic, salt, and pepper, making sure the spices get into the cuts.
Step 5
Insert bacon slices into each cut in the potatoes.
Step 6
Place each potato on a piece of foil. Add small pieces of butter on top of each potato. Wrap the foil around, raising the edges upwards so the juice doesn’t leak out during baking.
Step 7
Transfer the wrapped potatoes to a baking sheet (not a rack, to avoid dripping). Bake in a preheated oven at 200 °C (392 °F) for 35-45 minutes. Exact time depends on your oven and potato variety. If using raw bacon, it will cook through in this time.
Step 8
Open the foil. Brush the potatoes with the released juices and return them to the oven for another 7–10 minutes until nicely browned. You can turn on the broil setting. Enjoy!
