Potatoes in Sour Cream in Pots

Preparation
Step 1
Any fat content sour cream will work. You can also add your favorite spices in addition to the listed ones.

Wash and peel the potatoes. Cut large ones into 4 pieces, medium into halves, and leave small ones whole. You can also slice into rounds if you prefer.

Mix sour cream with clean drinking water until smooth.
Step 4
Rinse dill, shake off moisture, and finely chop. You may substitute or add other greens like parsley, green onion, or a mix of herbs.
Step 5
Place half the potatoes into the pots. Spread half the sour cream on top. Add salt, pepper, paprika, and half of the dill. (This recipe makes about 3 medium serving pots.)

Add the remaining potatoes. Pour over the rest of the sour cream, then season again with salt, pepper, and paprika.

Cover the pots with lids and place them into a warm (not hot) oven so the pots don’t crack from a sudden temperature change. Bake at 375°F (190°C) for 45-50 minutes or until the potatoes are done. Baking time depends on potato variety, cut size, and your oven.
Step 8
Remove the pots from the oven and let them rest at room temperature for 10 minutes with the lids still on. This makes the potatoes softer.

Sprinkle the baked potatoes in sour cream with the remaining fresh dill and serve hot. Enjoy!
