Potato Zrazy with Minced Meat and Champignon Mushrooms

Preparation
Step 1
Prepare the necessary ingredients and spices for making delicious stuffed potato zrazy.
Step 2
Peel 1 kg (2.2 lb) of potatoes and put them into a pot of boiling water. Salt to taste and boil until tender.
Step 3
Pour 1-2 tbsp vegetable oil into a skillet, then add 300 g (10.6 oz) homemade minced meat.
Step 4
Fry the minced meat over high heat for about 10 minutes.
Step 5
Finely chop 1-2 onions, add to the skillet with the meat, and sauté, stirring, until translucent.
Step 6
Cut 250 g (8.8 oz) mushrooms (to taste) into not-too-small pieces.
Step 7
Add the chopped mushrooms to the skillet and stir.
Step 8
Add salt and a mixed pepper blend to taste and fry, stirring, for about 7 minutes.

Stir everything, reduce the heat to low, cover the skillet with a lid, and cook the filling for about 4 more minutes.

Drain the water from the cooked potatoes, cover the pot with a lid, and let stand for about 3 minutes.

Transfer the filling from the skillet to a bowl and let it cool.

Mash the boiled potatoes well in the pot and let them cool slightly.

Add 2 tbsp vegetable oil to the warm potatoes.

Crack in and add 1 egg.

Add a mix of black and red pepper with nutmeg to taste.

Mix everything well.

Sift about 170 g (6.0 oz) flour into the potatoes in two additions.

Wet your hands with water. Take the needed amount of mashed potatoes into your palm and form a patty of the desired size.

Place the needed amount of filling onto each potato patty.

Bring the edges together well and shape zrazy of the desired size.

Place the shaped zrazy into a skillet with vegetable oil and fry over medium heat until golden on both sides.

For the sauce, put 3 tbsp sour cream into a bowl and add 2 garlic cloves pressed through a garlic press.

Add finely chopped herbs (parsley, dill, cilantro) to the sour cream and salt to taste.

Mix everything well.

Arrange the cooked zrazy on a plate, spoon the sour-cream sauce on top, and garnish with parsley sprigs.
