Potato with Meatballs in a Cauldron over a Campfire

Preparation
Step 1
You can use chicken, pork, beef mince, or mix different types of meat. The vegetable selection can vary depending on your taste preferences. I took a standard set of vegetables that almost any cook would have.

Peel the potatoes, onions, garlic, and carrots. Remove the core and seeds from the bell pepper. Rinse all vegetables. Soak potatoes in cold water to prevent discoloration.

Finely dice one onion. Add the onion to the mince, season with salt and your favorite spices. I usually use garlic powder, dried basil, and a ready meat seasoning mix. Mix everything thoroughly.

Cut the remaining onion into large cubes, carrots into thin sticks, and bell pepper into strips or cubes.

Mix the mince again and form medium-sized meatballs (about the size of a child’s fist).

Peel tomatoes if desired and cut them into thin slices. Chop garlic roughly.

Place the cauldron on the fire, pour in vegetable oil, and heat well over high heat.

Add bell pepper, onion, and carrots to fry. Cook, stirring, until the onion turns golden.

Add large-cut potatoes and meatballs to the cauldron.

Top with tomatoes, garlic, and bay leaf. Sprinkle with your favorite spices and salt to taste.

This dish is unique because it can be served as either a soup or a main course. I made a thick soup. Pour enough water to cover the meatballs almost completely. The amount of water depends on how thick you want your soup or sauce if serving as a main dish.

Bring everything to a boil over high heat, then reduce the flame and simmer with a lid until all ingredients are cooked (about 40-50 minutes). Sprinkle the finished dish with finely chopped greens.

Leave the cauldron uncovered, turn off the heat. Let the soup sit for 10-15 minutes to absorb the campfire aroma.
