Potato, Tomato, and Cucumber Salad

Step 1
Which oil is best for the salad? Unrefined vegetable oil, flaxseed oil, olive oil, or regular refined oil all work. In this recipe, I used olive oil. Wash potatoes thoroughly and boil until tender in lightly salted water.
Step 2
Wash and dry cucumber. Cut into small sticks. Lightly salted cucumbers can be chopped in the same way. Pickled cucumbers may also be used.
Step 3
Let cooked potatoes cool slightly and peel them. Peel and rinse onion and garlic (if used), then dry. For salads, I usually use red onion or shallots - they have a softer flavor and complement salads well.
Step 4
Cut potatoes into small cubes, place in a deep bowl. Add minced garlic and ground black pepper to taste. Mix everything well.
Step 5
Cut onion into thin slices or half-rings, dice tomatoes. I used several cherry tomatoes cut into quarters and a couple of medium tomatoes. Add them to the potatoes.
Step 6
Add both types of cucumber to the bowl. Prepare salad dressing: mix oil, mustard, and lemon juice in a small deep bowl.
Step 7
Wash greens, dry with paper towels, and chop finely. Dill, parsley, green onions, or chives work wonderfully. Add greens to the bowl and pour dressing over the salad.
Step 8
Mix everything well and let the salad rest for about 10-15 minutes. Taste for salt and pepper, adjust if needed, then serve.
