Step 1
How do you cook potato soup with meatballs? Prepare the listed ingredients. My ground meat is homemade, made from turkey and pork, but you can use any kind you like. Mine already contains onion and garlic. If you use store-bought ground meat, add finely chopped onion and garlic to it. You will also need 1.5-2 liters of water or broth, about 6 1/3-8 1/2 cups.

Fill your chosen pot with broth and place it over high heat. Wash the potatoes, peel them, and rinse them. Cut the peeled potatoes into cubes. When the liquid in the pot comes to a boil, add the chopped potatoes. After it returns to a boil, reduce the heat to medium. If foam appears, remove it with a skimmer.
Step 3
Before the broth boils, peel and wash the onion and carrot. Finely chop the onion, and grate the carrot on a medium grater or cut it into small pieces. Heat a skillet with oil over medium heat and sauté the vegetables for a few minutes. As soon as the liquid in the pot with the potatoes boils, add the sautéed vegetables to the pot. Cook the soup after it comes back to a boil, covered, for 10-15 minutes.
Step 4
With wet hands, roll the ground meat into small meatballs. After the indicated cooking time, add the prepared meatballs to the soup. Add salt and ground black pepper. Once the meatballs float to the surface, cook the soup uncovered for 10 minutes if the meatballs are about 1.5 cm, about 1/2 inch, in diameter. If they are the size of a walnut, cook them for 15-20 minutes.
Step 5
Rinse the fresh dill under cold running water and dry it with a paper towel. Finely chop the dill. Remove the finished soup from the heat. Add the chopped fresh dill to the soup, stir, and cover with a lid. Let the soup rest for 10-15 minutes before serving.
Step 6
If desired, sprinkle the soup with freshly chopped herbs when serving. Enjoy your meal!
