Potato Gnocchi

Incredibly delicious dish that will win the heart of any gourmet! Potato gnocchi is a classic of traditional Italian cuisine. These are dumplings made from potato dough, first boiled and then served with any sauce. For example, as in this recipe, with a tomato-spinach sauce.

Preparation
Step 1
Prepare the ingredients. Choose starchy, old potatoes for better texture. Use fresh or frozen spinach. Instead of a regular tomato, cherry tomatoes also work well.
Step 2
Wash the potatoes thoroughly under running water with a brush. Do not peel them. Place in a pot, cover with cold water, and bring to a boil over medium heat. Cook for 25-30 minutes, depending on the size of the potatoes. Check doneness by inserting a knife—it should go in and out easily. Drain the water.
Step 3
Carefully peel the hot potatoes to avoid burning yourself. Mash them well, add salt and an egg, then mix the egg into the mashed potatoes.
Step 4
Gradually add flour, stirring gently after each addition. Avoid over-kneading—just fold the flour in until you get a uniform dough. The dough should be soft, slightly sticky, but able to hold its shape. Adjust the flour amount if needed.
Step 5
Roll a portion of the dough into a rope on a floured surface.
Step 6
Cut into small pieces and dust them lightly with flour.
Step 7
Boil the gnocchi in salted water. As soon as they float to the surface, remove them with a slotted spoon and transfer to a plate. Boil in small batches to prevent sticking.
Step 8
Prepare the sauce. Heat vegetable oil in a pan. Add sliced garlic and sauté until fragrant, then remove it—garlic is used just for aroma.
Step 9
Add chopped spinach to the pan, followed by diced tomatoes.
Step 10
Pour in a couple of tablespoons of the gnocchi’s cooking water. Season with salt and pepper. Optionally, add a pinch of sugar to balance the acidity of the tomatoes. Simmer for a few minutes until the tomatoes soften.

Add the boiled gnocchi to the sauce, gently stir, and heat everything together.

Serve hot with tomato sauce. Enjoy your meal!
