Potato Filling for Hand Pies
Made from budget-friendly ingredients, quick to prepare, simple and tasty! Potato filling for hand pies can be made from just two ingredients: vegetables and herbs. But in this recipe we make it with milk, green onion, and butter. It turns out super delicious!

Step 1
How do you make potato filling for hand pies? Prepare all the necessary ingredients. You can use any potatoes, young or old. The flavor will simply be different. Choose the herbs according to your taste. Personally, I like the combination of potatoes with onion and dill.

Wash the potatoes thoroughly, peel them, and rinse them again.
Step 3
Cut the potatoes into pieces of about the same size so that all the potatoes cook at the same time. The smaller the pieces, the faster they will cook.
Step 4
Transfer the potatoes to a pot and cover them with clean cold water. Cover the pot with a lid and bring it to a boil over high heat. Reduce the heat to medium and cook for 15-25 minutes. The cooking time will depend on your stove and on how the potatoes are cut. There is no need to salt the potatoes.
Step 5
While the potatoes are cooking, remove any wilted parts from the herbs and rinse them under running water. Dry the herbs thoroughly with cotton or paper towels.
Step 6
Chop the fresh herbs with a knife or a blender. I like visible pieces of herbs in the filling, so I use a knife. Bring the milk to a boil and remove it from the heat right away. We need the milk to make the mashed potatoes.
Step 7
Check whether the potatoes are done. You can do this as follows: pierce a potato with a knife. If the potato falls back down when you lift the knife, it is done. If it stays on the knife, cook it a little longer and check again. Drain all the water from the pot.
Step 8
Pour the boiled milk into the potatoes and add the butter. Add the butter if desired; you can also make it without it. Mash the potatoes with a potato masher. Many people make mashed potatoes with a blender. That method will not work for us, because the purée becomes heavy and very sticky. It will be difficult to work with. Mash the potatoes while they are still hot; later it will be problematic.
Step 9
Add the chopped herbs to the mashed potatoes, salt them, and mix the purée thoroughly until uniform. The potato filling for hand pies is ready. Fill the pies only when the filling has cooled, otherwise you can spoil the dough.
