Potato, Egg and Onion Soup

Step 1
How to cook potato, egg and onion soup? Prepare all the necessary ingredients. Wash the potatoes, peel them, and cut into medium cubes. Put the potatoes in a pot, cover with water, and set on the heat. Cook for about 10 minutes.
Step 2
Wash the carrot, peel it, and chop it the way you prefer - I diced it. Peel the onion and dice it. Heat oil in a frying pan and sauté the onion and carrot over medium heat until nicely golden.
Step 3
Add the sautéed onion and carrot to the pot with the potatoes. Season with salt and pepper, add a bay leaf and herbs, and cook until the potatoes are fully tender.
Step 4
Crack the eggs into a small bowl and lightly beat with a fork. When the potatoes are ready, pour the beaten egg into the soup in a thin stream, stirring constantly. Remove the pot from the heat.
