Step 1
How do you make potato dough for hand pies? Prepare the necessary ingredients. Wash the potatoes thoroughly with a brush under running water.

Peel the potatoes, cut them into pieces, and cover them with cold water in a pot.

Bring the potatoes to a boil over high heat, then add salt. Cook the potatoes at a moderate boil until done. The cooking time will depend on the variety of potato. The cooked potatoes should be completely soft and easy to pierce with a knife.

Drain all the water from the potatoes and mash them with a potato masher so there are no lumps.

Add the butter to the potatoes and mix. You can do this while mashing the potatoes. Let the mashed potatoes cool. You can transfer them to another bowl so they cool faster.

Add the raw egg to the cooled mashed potatoes. Mash again so the egg is distributed evenly throughout the mixture.
Step 7
Sift the flour together with the baking powder. This will improve the leavening effect of the baking powder.

Add a little more than half of the sifted flour to the potato mixture and mix. Add the rest of the flour in small portions, mixing the dough each time. You may need a little more or a little less flour. That depends on its properties and quality. I used all-purpose wheat flour. But for this dough, first-grade flour also works well and is suitable for savory baking.
Step 9
Do not add too much flour, or the dough will turn out dense. Hand pies made from such dough will be heavy. The dough should be soft, pliable, and only slightly sticky to the hands. The potato dough is ready, and you can start shaping the hand pies.
Step 10
To do that, divide the dough into equal pieces of the desired size. When shaping the hand pies, dust the table with flour so the dough does not stick. Place the filling onto the rolled-out piece of dough, mine was green onion with boiled egg, and shape the hand pie. Hand pies made from potato dough can be baked in the oven or fried in a skillet with a little vegetable oil until golden brown. Happy baking!
