Potato Casserole with Onions

With an aromatic cheesy crust, this casserole is tender and juicy! Potato casserole with onions is made from simple ingredients, yet turns out hearty and delicious. It’s perfect for an everyday family dinner and can easily be served as a side to meat or fish dishes.

Preparation
Step 1
Use any cheese that melts well. Choose herbs you like - I used cilantro.
Step 2
Wash the potatoes thoroughly, peel, and cut into thin rings.
Step 3
Peel the onion and cut into rings or half-rings.
Step 4
Heat a couple of tablespoons of vegetable oil in a pan and fry the sliced potatoes until golden brown. Then fry the onions separately in the same way.
Step 5
Layer the fried potatoes and onions in a baking dish greased with vegetable oil.
Step 6
Beat the eggs with salt and pepper, then mix with half of the cheese, grated on a coarse grater.
Step 7
Pour the mixture into the dish and place the casserole in a preheated oven at 350°F (180°C) for 15-20 minutes.
Step 8
Wash, dry, and finely chop the herbs.
Step 9
Mix the chopped herbs with the remaining cheese.
Step 10
A couple of minutes before the casserole is done, remove it from the oven, sprinkle with cheese and herbs, and return to the oven. Serve hot with sour cream or your favorite sauce. Enjoy!
