Potato Casserole with Ground Chicken in the Oven

Simple and hearty, and so tasty they’ll ask for more! This potato casserole with ground chicken is baked in layers. You can also add other vegetables like onions, bell peppers, or green peas. It’s a simple, accessible dish that’s easy to serve - and the flavor won’t disappoint anyone!

Preparation
Step 1
You can replace olive oil with sunflower oil. Use a tomato with firm skin so it keeps its shape when sliced.
Step 2
Peel the onion, rinse, and grate on a fine grater.
Step 3
Wash the parsley, pat dry, and finely chop. You can also use dill or cilantro.
Step 4
Combine ground chicken with grated onion and parsley, add salt and black pepper. Mix well. Add herbs to the filling if desired.
Step 5
Peel and wash the carrot, cut into rounds.
Step 6
Peel and wash the potatoes, also slice them into rounds.
Step 7
In a bowl, combine prepared vegetables, salt, add herbs or any preferred spices. Drizzle with olive oil and mix. Preheat the oven to 375°F (190°C).
Step 8
Grease a baking dish with some olive oil. My dish is 10.5x7 in (27x17 cm). Spread half of the vegetables on the bottom.
Step 9
Evenly distribute the ground chicken over the vegetables. Wet hands help prevent sticking.
Step 10
Layer the remaining vegetables on top of the meat.
Step 11
Cover the dish with foil and bake in the preheated oven at 375°F (190°C) for about 35-40 minutes. Cooking time may vary depending on your oven and potato type.
Step 12
Grate the cheese using a coarse grater. Use any cheese you like - hard, semi-hard, or soft - as long as it’s tasty and without milk fat substitutes.

In a bowl, whisk sour cream and egg until smooth.

Add grated cheese to the mixture and stir well.

Remove the dish from the oven. Carefully remove the foil and check if the potatoes are almost tender. Spread the sour cream mixture on top.

Wash and pat dry the tomato. Slice into rounds or half-rounds and place on top of the casserole.
Step 17
Return the dish to the oven for about 10 more minutes until the top firms up and turns golden.

Serve the potato casserole warm as a main dish with fresh vegetables and herbs. Enjoy!
