Pork with Oranges Baked in the Oven

Juicy and delicious meat for dinner or a festive table! Pork with oranges baked in the oven is perfect for both weekdays and celebrations. Serve it with any side dish or fresh vegetable salad. You can substitute pork with poultry fillet, rabbit, or veal.

Preparation
Step 1
First, prepare all the necessary ingredients. You can use any cut of pork (ham, tenderloin, loin, neck, etc.). Here we use tender, soft tenderloin.
Step 2
Rinse the pork tenderloin, pat it dry, and cut into slices about ½-⅔ inch (1-1.5 cm) thick. If desired, lightly pound the slices with a meat mallet.
Step 3
Wash the oranges thoroughly. Squeeze the juice from one orange - a juicer works best. You can use store-bought juice instead.
Step 4
Peel the second orange and cut it into thin rings.
Step 5
Place the pork slices in a bowl. Sprinkle with paprika and rosemary. Pour in the orange juice. Mix the meat well and let it marinate for 20-30 minutes. You can add or substitute other spices to your taste.

Arrange the orange slices in a single layer in a baking dish.

Place the marinated pork with the marinade on top of the oranges in one layer. Drizzle with vegetable oil, a bit of lemon juice, salt, and pepper. Bake in a preheated oven at 350°F (180°C) for 30-40 minutes, occasionally spooning the juices from the bottom of the dish over the meat. Baking time depends on the pork cut, size of the pieces, and your oven - don’t overcook it to keep the meat juicy.

Transfer the cooked pork to a plate along with the orange slices. Pour some of the pan juices over the top, garnish with herbs, and serve with your favorite side dish. Bon appétit!
