Pork Tongue Salad with Pickled Cucumbers

Step 1
How to make tongue salad with cucumbers? Prepare the ingredients. Use large eggs; if the eggs are small, take 4. If the cucumbers are large, 2 are enough; if small, use 3. Instead of lettuce leaves, you can use a ready salad mix.
Step 2
Boil the tongue in advance until tender in water with a whole peeled onion, bay leaf, salt, and whole allspice. This makes the tongue more aromatic and flavorful. Peel the cooked tongue. Pork tongues should be boiled for about 1.5-2 hours. I usually cook them late in the evening in a pressure cooker and leave them on the cooling stovetop burner until morning - this way they turn out tender and don’t dry out.

Cool the tongue and cut it into thin, long matchsticks.

Cut the pickled cucumbers into thin, long matchsticks.
Step 5
Hard-boil the eggs, peel them, and cut into matchsticks. For a more even texture, you can grate the eggs on a coarse grater.

Finely chop the walnuts. You can skip the nuts, but they make the salad much tastier. Walnuts can be replaced with salted peanuts or other nuts to taste.
Step 7
In a salad bowl, combine the pork tongue, pickled cucumbers, eggs, and walnuts. Dress with mayonnaise and mix.
Step 8
Arrange lettuce leaves on a platter. Pile the salad on top. You can sprinkle with chopped nuts. If you like, chill the salad for 10-15 minutes. Serve. Enjoy!
