Pork Skewers with Potatoes in the Oven

Very juicy and fantastically delicious – just like over an open fire! Pork skewers with potatoes baked in the oven can be made year-round. It’s a simple yet impressive dish for any celebration. You can also add vegetables to the potato garnish, or substitute pork with chicken or turkey.

Step 1
Choose boneless pork such as shoulder, ham, or neck. I used ham. You can use apple or wine vinegar instead of regular one. You can also add other vegetables like bell peppers or zucchini.
Step 2
Rinse the pork and cut it into small portions. You can also use chicken breast or turkey. Keep in mind the cooking time and calories will vary.
Step 3
Slice the onions into rings. Use 2-3 small onions if needed.
Step 4
In a bowl, mix the meat, onion, vegetable oil, and vinegar. Add spices and mix gently, keeping onion rings intact. Let marinate for 2 hours at room temperature (if cool), or overnight in the fridge.
Step 5
While the meat marinates, soak bamboo skewers in cold water for about 2 hours to prevent burning. Mine were 12 inches long (30 cm).
Step 6
Peel and slice the potatoes into rounds. Salt, pepper, and mix them well. The type of potato affects the cooking time, so choose one suitable for baking.
Step 7
Thread the pork and onion alternately onto the skewers. Add about 5–6 small pieces of meat per skewer so they’re not too heavy or long for the baking dish.
Step 8
Grease a baking dish with oil, lay the potato slices on the bottom, then place the skewers on top. Pour remaining marinade over and optionally a bit of water.
Step 9
Cover the dish with foil to prevent the meat from drying out and help the potatoes cook. Bake at 350°F (180°C) for 35–40 minutes. If potatoes aren't ready, leave longer. Once they’re cooked, remove the foil and bake another 7–10 minutes until the meat browns. You can use the grill function.
Step 10
Serve the pork skewers hot with a side of fresh salad and herbs. Enjoy!
