Preparation
Step 1
How to cook pork ramen at home? Prepare the ingredients from the list. You can use chicken or beef instead of pork. Adjust ginger, pepper, salt, and soy sauce to your taste, keeping in mind the soup is quite spicy and salty.
Step 2
Rinse the pork, pat it dry, rub with salt and pepper, then sear it in olive oil on all sides over high heat.
Step 3
Wash and peel all the vegetables and the green onion, then cut into medium pieces.
Step 4
Sauté everything in olive oil in an oven-safe pot.
Step 5
Pour the broth into the pot, add soy sauce, rice wine, salt, and drop in one whole chili pepper. Bring to a boil, then add the seared pork, cover with a lid, and place in a preheated 180°C (356°F) oven for 2 hours.
Step 6
While the soup braises in the oven, prepare the toppings. Wheat noodles work best. Boil the egg(s) hard, and use either black or white sesame seeds.
Step 7
Rinse and pat dry the carrot, pepper, and onion. Slice the chili pepper and green onion with a knife; grate the carrot on a Korean-style grater if you like.
Step 8
In a skillet with oil, lightly sauté the carrot first, then add the green onion.
Step 9
Boil the noodles in boiling water for 5-7 minutes.
Step 10
Remove the pot from the oven, take out the meat, trim off excess fat, and slice it. Strain the broth and discard the vegetables.
Step 11
Assemble: place noodles and pork into a bowl, pour over the broth, add half an egg and the sautéed carrot with onion, sprinkle with sesame seeds and a pepper blend, and add a little fresh chili if desired. Serve the ramen hot - enjoy!
