Pork Loin Salad

Preparation
Step 1
Prepare all the ingredients. You can use homemade mayonnaise or replace it with vegetable oil for a lighter salad. Remove any wilted outer leaves from the Chinese cabbage. Separate the good leaves, rinse them and shake off the excess water. Finely shred the leaves.
Step 2
Rinse the cucumbers and cut them into half-moons. You can peel them beforehand, especially if using thick-skinned greenhouse cucumbers. Add the cucumbers to the shredded Chinese cabbage.
Step 3
Drain the liquid from the canned peas. Add the peas to the cucumbers and Chinese cabbage.
Step 4
Cut the pork loin into medium-thick slices, then dice it into small pieces. Removing the layer of fat beforehand will reduce the calorie content of the finished salad.
Step 5
Place all the ingredients in a salad bowl and season with salt to taste. Add the mayonnaise and mix well. Garnish with fresh parsley or dill and serve.
