Pork Goulash with Tomato Sauce

Preparation
Step 1
First, prepare all the ingredients. You can substitute pork tenderloin with another cut, like ham or shoulder. Tomato paste can be replaced with ketchup or fresh peeled and diced tomatoes. Any vegetable oil works.
Step 2
Wash the meat and pat dry with paper towels. Excess moisture will prevent proper browning and make it stew instead. Cut the meat into small strips.
Step 3
Peel the onion and dice finely.
Step 4
Wash and dry the parsley, then chop finely. Optionally, replace or add other herbs like dill, cilantro, or a mixture.

Heat vegetable oil in a skillet. Add the pork and fry over high heat for about 5 minutes until a golden crust forms, stirring frequently.

Add the onion to the skillet with the pork. Fry together, stirring, for 3-5 minutes. If the onion starts browning too fast, reduce the heat or shorten the time.
Step 7
Season the goulash with salt and pepper. Add whole allspice and flour. Mix everything and fry for 2-3 minutes.

Add the tomato paste and stir. If the paste is very acidic, add a pinch of sugar.
Step 9
Add bay leaves. Pour in 500 ml (about 2 cups) of boiling water or broth to make the meat tender. Cover the skillet and simmer on low heat for about 30 minutes.

Serve the goulash on plates and sprinkle with chopped herbs. Enjoy!
