Pork Belly with Cinnamon Apple Sauce

Preparation
Step 1
The most labor-intensive part of cooking is making cuts in the skin. They need to be deep enough, but not so deep that they reach the meat, otherwise it may burn. Make cuts in the skin about 1 cm / about 1/2 inch apart.
Step 2
Transfer the meat to a baking dish. Rub the skin generously with sea salt, then add grated garlic and lemon juice on top. Drizzle the skin with vegetable oil and spread it over the whole surface with your hands.
Step 3
Place the pork belly in the oven on convection mode at 220°C / 428°F for 25–30 minutes.
Step 4
After 25 minutes, the skin will have started to brown intensely. Now change the temperature: cook for 1 1/2 hours at 140°C / 284°F on convection mode.
Step 5
Meanwhile, prepare the sauce. Cut the apples into medium wedges, peel them, remove the seeds, and place them in a saucepan. Add water, 3–4 tablespoons, cover with a lid, and stew for 10–15 minutes. The apples should become soft. They are ready when they start sticking to the bottom.
Step 6
Now comes the final stage of cooking the meat. Return it to 220°C / 428°F for 15 minutes to finish the crust.
Step 7
The apples are ready. Add 1 teaspoon of cinnamon to them. Meanwhile, the meat can be taken out of the oven.
Step 8
Serve with the apples as a side dish. Enjoy!
