Preparation
Step 1
First, prepare all the necessary ingredients and spices for the aromatic meat cutlets with zucchini.
Step 2
To make the right texture of the mixture, grate 300 g (10.5 oz) of young zucchini into a large bowl using a fine grater. Then grate 1 medium onion and 2 garlic cloves into the same bowl.
Step 3
Add 500 g (1.1 lb) of mixed ground pork and beef (you can use other meats to your liking).
Step 4
Season with salt to taste, ⅓ tsp cumin, ⅓ tsp coriander, and ½ tsp khmeli-suneli.
Step 5
Add 1 egg and finely chopped parsley to the mixture.
Step 6
Add a mix of black and red pepper to taste, and mix everything thoroughly. Let the mixture rest for 20 minutes to absorb the spices.

Heat a frying pan (preferably with a thick bottom) over medium-high heat. Pour in 2-3 tbsp of vegetable oil and heat it well.
Step 8
Take portions of the mixture, form them into cutlets, and pat them firmly with your hands.

Coat each cutlet in breadcrumbs mixed with wheat flour.
Step 10
Place the cutlets into the hot oil and fry over high heat until golden brown on one side.

Flip the cutlets, cover the pan with a lid, and cook over low heat for 15-20 minutes, until fully cooked inside.
