Poppy Seed Bagels with Milk

Preparation
Step 1
Prepare all the necessary ingredients for making airy and appetizing bagels.
Step 2
Pour 250 ml of warm milk, about 1 cup plus 1 tablespoon, into a measuring cup and add 7 g of instant dry yeast, about 2 1/4 teaspoons.
Step 3
Add 3 tablespoons of sugar and 1 heaping tablespoon of flour to the cup.
Step 4
Mix all the ingredients in the cup well and set it aside for 15-20 minutes to activate the yeast.
Step 5
Pour boiling water over 20 g of poppy seeds, about 2 tablespoons, cover, and leave them to swell.
Step 6
Crack 1 chicken egg into a deep bowl.
Step 7
Add 1/2 teaspoon of salt to the bowl with the egg.
Step 8
Add 40 g of softened butter, about 3 tablespoons, to the bowl.
Step 9
Mix all the ingredients in the bowl well.
Step 10
Add 1 1/2 tablespoons of poppy seeds, rinsed well under cold running water, to the bowl.

Pour the activated yeast mixture into the bowl with the egg mixture.

Mix all the ingredients in the bowl together well.

Add 10 g of baking powder, about 2 teaspoons, to the flour.

Mix the flour and baking powder well.
Step 15
Sift the flour into the bowl with the liquid base in portions.

Mix all the ingredients in the bowl together and continue kneading the dough by hand.
Step 17
Transfer the dough to the table and knead it thoroughly for about 7 minutes.

Drizzle the dough with a small amount of vegetable oil and coat it lightly.

Return the dough to the bowl, cover it with a towel, and place it in a warm spot for 50 minutes.

After 50 minutes, place the dough on the table.

Punch down the dough thoroughly to release the carbon dioxide.

Divide the dough into roughly equal pieces and shape them into bagels.

Place the bagels on a baking sheet, cover them with a towel, and leave them to proof for 20 minutes.

Bring water to a boil in a deep skillet and lower each bagel into the boiling water for 15 seconds on one side using a slotted spoon.

Turn the bagel over in the boiling water and leave it for another 15 seconds.

Blot the bagels with a paper towel and place them on a baking sheet, then brush them with beaten egg.

Sprinkle the tops of the bagels with poppy seeds and place the baking sheet into an oven preheated to 180°C (350°F) for 15 minutes.

Leave the baking sheet with the bagels in the switched-off, closed oven for another 5 minutes, then remove the bagels from the oven and transfer them to a plate.
