Pollock in a Pot with Onions

Simple and very appetizing. Not a single piece will be left! Pollock in a Pot with Onions is stewed without pre-frying. The cooking process is effortless and takes little time. The fish absorbs the juice and aroma of the vegetables, developing a rich flavor. Try it!

Preparation
Step 1
Prepare all the necessary ingredients. I used a large onion. If your onions are smaller, use two. If the fish is frozen, place it on the top shelf of the refrigerator in advance to thaw. Olive oil can be replaced with neutral vegetable oil.
Step 2
Wash the fish thoroughly, cut off the tail and fins. Clean the belly from the black membrane. Cut the pollock into portion-sized pieces as desired.
Step 3
Peel and wash the onion. Slice it into half-rings. If the onion is large, quarter it instead.
Step 4
Wash and peel the carrot, then grate it using a coarse grater. I used a Korean-style carrot grater.
Step 5
Wash the tomato and cut it into medium-sized cubes. Choose a ripe but firm tomato with a tight skin.
Step 6
Add olive oil to a suitable-sized pot. Place the prepared vegetables inside. Pour in a tablespoon of warm water and sauté the vegetables over moderate heat, stirring, until they are half-cooked.
Step 7
Add the pollock pieces to the vegetables, season with salt, cover the pot with a lid, and let the fish stew with the vegetables for about 10 minutes.
Step 8
Carefully stir everything, flipping the pollock pieces to the other side. The fish will be covered in vegetables from all sides and will soak up the vegetable juices during cooking.
Step 9
Add the chopped tomato to the pot. Season with ground black pepper and bay leaf. You may also add additional spices of your choice.
Step 10
Let the pollock stew with the vegetables on low heat for about 20 minutes. The cooking time will depend on your stove's power and features. The fish and vegetables should become soft but maintain their shape.
Step 11
Serve the stewed pollock with vegetables alongside any side dish of your choice: potatoes, grains, or pasta. Enjoy your meal!
