Pollock Fish Cutlets in the Oven
Make simple and tasty cutlets in the oven. Most often, we fry cutlets in a pan. That gives them a juicy golden crust. However, in the oven we can make cutlets that are just as tasty and juicy. Today we will make such cutlets from pollock and bake them in the oven.

Preparation
Step 1
How do you make pollock fish cutlets in the oven? Prepare all the necessary ingredients. The cutlets can be made either from fresh fish fillets or from frozen fish. In that case, thaw the fish in the refrigerator beforehand and squeeze out the excess water. If you use frozen fish, keep in mind that after thawing you will have less actual fish left. So take a little extra. Ready-made pollock fish mince will also work.
Step 2
Cut the crusts off the slices of white bread. Pour milk over the bread and leave it for 10 minutes. It is better to use bread that is not very soft, for example, yesterday’s bread. If your bread is completely dry, that is fine too, the milk will soften it.

Wash the pollock fillet, dry it, and remove any small bones.

Place the fillet into a blender bowl and blend until smooth.

Transfer the prepared fish mince to a bowl. Squeeze the bread and add it to the mince. Also add the egg, melted butter, salt, and pepper. Add the garlic clove pressed through a garlic press.

Knead the mince thoroughly with your hands. If the mince turns out too loose, add 1-2 tablespoons of semolina and leave it for 20 minutes to swell. Put the finished mince into the refrigerator for 20 minutes.
Step 7
Pour semolina or breadcrumbs onto a flat plate. Form medium-sized round cutlets from the chilled mince and coat them on all sides in the breading.
Step 8
Place the cutlets on a baking sheet lined with parchment paper. Put the fish cutlets into an oven preheated to 180°C (350°F) and bake for 30-35 minutes. The exact baking time depends on your oven, so use it as your guide. If your oven has a convection setting, it is better to turn it on. Then the cutlets will bake evenly on both the top and the bottom. They may even bake faster, but it is important to check that they do not dry out.
