Plum tart

This easy baked plum slice combines a soft, zesty base with sweet, cinnamon-spiced plums. A comforting dessert or teatime treat.

Preparation
Step 1
Preheat the oven to 180C/350F and lightly grease a 23x33cm (9x13in) Swiss roll tin.
Step 2
In a bowl, rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs. Stir in the caster sugar and orange zest. Add the milk and mix using a flat-bladed knife until the dough comes together - adding a splash more milk if needed to fully combine.
Step 3
Transfer the mixture to the prepared tin and spread it out evenly to smooth the surface.
Step 4
Arrange the halved plums on top, cut side facing up, and dot each one with a little butter.
Step 5
In a separate bowl, mix the demerara sugar with cinnamon and sprinkle this over the plums. Finish with a light drizzle of orange juice across the top.
Step 6
Bake for about 20 minutes, or until the base is golden and the plums are bubbling and tender.
