Plum crumble
A comforting plum crumble with a crisp oat topping, baked until golden and bubbling, and perfect served warm with plenty of custard.

Step 1
Preheat the oven to 180C and grease a 30cm/12in square ovenproof dish.
Step 2
Arrange the plums evenly over the base of the dish. Drizzle over the lemon juice, then sprinkle the sugar evenly across the fruit.
Step 3
To make the crumble topping, place the flour, caster sugar, muscovado sugar and cold butter cubes into a bowl. Using your fingertips, rub the mixture together until it resembles coarse breadcrumbs. It’s important that the butter is cold, otherwise the mixture will become doughy rather than crumbly. Once the crumble texture is achieved, stir through the oats and lemon zest until well combined.
Step 4
Scatter the crumble mixture evenly over the plums. Transfer the dish to the oven and bake for 40-45 minutes, or until the topping is golden brown and the fruit is bubbling underneath.
Step 5
To serve, spoon generous portions into bowls and enjoy with plenty of custard.
