Plum and Peach Compote for Winter

Any varieties of plums and peaches can be used to prepare this compote. You can remove the plum pits by cutting the fruit in half, but I usually leave them in - do whatever is more convenient for you. Since the compote is not sterilized, it is considered a very healthy drink, preserving the maximum amount of vitamins.

Preparation
Step 1
The ratio of plums to peaches per jar can vary from the recipe. You may use slightly fewer plums and more peaches. I made compote for four 3-liter (approximately 3.2 quarts) jars, so I multiplied the ingredients by 4. Sort the plums, removing stems and spoiled fruit. Choose firm and dense peaches. Wash the fruits in cold water.
Step 2
Wash jars thoroughly with baking soda, rinse several times, then sterilize them using a water bath or any other method. Put the lids into boiling water and hold them for 5-10 minutes.
Step 3
Cut peaches in half and remove the pits. Then cut each half into two pieces.
Step 4
Put plums and peaches into the jars.
Step 5
Fill the jars with boiling water to the very top. Cover with sterile lids and leave like this for 15-20 minutes.
Step 6
Carefully pour the water from the jars into a pot. Bring to a boil over high heat.
Step 7
Add sugar and a pinch of citric acid to each jar.
Step 8
Pour the boiling water back into the jars up to the neck.
Step 9
Seal the compote jars with lids using a jar key. Turn the jars upside down and wrap them in a warm blanket. Leave them until completely cool (about 24 hours). Then store the compote in a cellar or pantry for winter and beyond.
