Step 1
How do you fry pike-perch in batter? Prepare all the necessary ingredients. It is best to use chilled fish. This can be pike-perch steaks or pike-perch fillet. If your fish is frozen, it needs to be thawed properly: after taking it out of the freezer, place it in the refrigerator for 8 hours and only then thaw it completely at a higher temperature.
Step 2
Rinse the fish well, remove any visible large bones, and pat it dry. Cut it into medium-sized pieces.

Sift the flour onto a separate plate. I recommend always sifting flour - during this process it is enriched with oxygen, and the batter will turn out lighter. Salt the flour and mix it. Here you can also add some dried seasonings, such as hot ground pepper or paprika, thyme, or herbes de Provence. By the way, the flour can be regular wheat flour. But rice flour also works well for fish dishes.

Coat each piece of fish well in the flour mixture.

Then dip it well into the egg mixture.

And once again coat it in flour on all sides.

Heat the vegetable oil in a frying pan. It can be any vegetable oil, from sunflower to olive. But if you are frying something until crispy, the oil must be refined so it does not burn in the pan. Place the fish pieces into the pan and fry them over low heat for about 8-10 minutes. Do not use high heat - the coating will brown, but the fish will remain raw inside.

Then carefully turn the fish pieces over and fry them on the other side for the same amount of time. You may need to cover the pan with a lid to make sure the fish cooks through.
