Advice
Be prepared that you may need more or less flour than stated in the recipe. Focus not on the amount, but on the desired dough consistency.
Preparation
Step 1
Prepare the necessary ingredients for the dough. Use high-quality flour. You can use homemade or store-bought whey. I used homemade whey left over from making Adyghe cheese.
Step 2
Add vinegar, sugar, and salt to warm whey and mix. Taste the whey before adding salt - if it’s already salty, no need to add more.
Step 3
Melt the butter and let it cool. Pour it into the whey mixture and stir. You can substitute vegetable oil for butter.
Step 4
Gradually add sifted flour mixed with baking soda. Knead a soft, elastic dough. Add more flour as needed.
Step 5
The amount of flour will vary. The dough will "take" what it needs. If it’s still sticky and needs more than in the recipe, don’t overdo it - too much flour makes dense dough. Dust the surface and rolling pin instead. Shape dough into a ball.
Step 6
Wrap the dough in plastic wrap and let it rest for 15 minutes. This develops the gluten and improves elasticity. This dough is also perfect for pizza. Preheat the oven to 350°F (180°C).
Step 7
Prepare the filling. Use any ground meat (pork, beef, a mix, chicken, or turkey). Note that calories and cooking time will vary. You can use homemade mayo or substitute sour cream.
Step 8
Clean bell pepper from seeds and stem, then dice it finely.
Step 9
In a bowl, combine ground meat, bell pepper, mayonnaise, and spices. Mix until smooth.
Step 10
Prepare the topping. If eggs are small, use 2. You can replace mayo with sour cream—add seasoning to taste.
Step 11
Beat the egg with mayonnaise using a fork until smooth.
Step 12
Roll out the dough into a round and place it into a parchment-lined and greased 22 cm (9 in) baking pan. Form edges. Prick the bottom with a fork.
Step 13
Evenly spread the meat filling over the dough.
Step 14
Pour the egg-mayo mixture over the filling. Bake in a preheated 350°F (180°C) oven for 40-50 minutes until golden. Time may vary by oven.
Step 15
Transfer the baked pie to a plate, slice, and serve. Enjoy your meal!
