Pie with Soufflé Cream

The most delicate pastry made from crispy dough with an airy layer. Pie with soufflé cream turns out incredibly tasty! A great choice to please your family or guests with wonderful sweet baking. You can add any berries, fruits, or jam under the soufflé layer.

Preparation
Step 1
Use high-quality wheat flour. Adjust sugar to taste. Preheat the oven to 350°F (180°C).
Step 2
Melt butter over low heat or in the microwave. Cool the melted butter to room temperature.
Step 3
In a bowl, combine egg yolks with sugar and whisk until the sugar dissolves completely.
Step 4
Pour in the melted butter and mix.
Step 5
Add sifted flour with baking powder and stir with a spoon.
Step 6
Then rub the mixture with your hands into crumbs. Don’t knead long, or the pie will be tough. Alternatively, put all ingredients in a blender bowl and pulse until crumbly.
Step 7
Now prepare the soufflé filling. Use yogurt with 4-6% fat. Greek yogurt can be replaced with regular natural yogurt or sour cream with 15-20% fat.
Step 8
In a bowl, beat the egg whites with a pinch of salt until fluffy foam forms. Whites must be cold and free of yolk, and the bowl must be clean and dry. If these conditions are not met, the whites won’t whip properly. While beating, gradually add sugar and vanilla sugar. Add yogurt and gently fold with a spatula until smooth.
Step 9
Add sifted flour and carefully fold the soufflé with a spatula. The mixture should remain fluffy and airy. Do not use a mixer at this stage.
Step 10
In a parchment-lined baking pan (8–9 inches / 20-22 cm diameter), pour half of the crumb dough and press it down, forming low edges.
Step 11
Spread the soufflé over the dough and smooth it out.
Step 12
Sprinkle the remaining crumb dough on top. Bake in the preheated oven at 350°F (180°C) for about 35 minutes or until golden brown. Baking time depends on the oven.

Transfer the ready pie with soufflé cream to a plate and serve. Enjoy your meal!
